Let’s see Lord, how can we put these all together?

For a serious change of pace, I thought it might be well to incorporate some food into this blog!!  Now, I don’t even want to pretend that I am a good cook, in any sense of the word.  As a matter of fact, I hate to cook.  But I do like to eat, and that fact alone should give me some sense of authority on the subject….sort of…don’t ya think??

Anyway, I thought maybe I would share some of my favorite quick and easy recipes and then maybe a link or two to other sites that might be of help in the recipe department.  If you would like to share your favorite recipes too, send them to me and I will pass along as space permits in future posts!


Ooh, yum! what’s for lunch?


The following Jello salad is the most refreshing I’ve ever had.  It’s especially good served on a hot summer day!




1 large pkg lime Jello

1 8oz container of cottage cheese, 4% low fat is best as it’s not as soupy as others with more fat (add more cottage cheese if you prefer)

1 15 to 16 oz can of pineapple tidbits (or small can of crushed pineapple can be used), poor out the juice before using in salad

About 2 tablespoons Miracle Whip as desired to add a little “kick”


Prepare ingredients:  

Prepare Jello using package instructions and put into refrigerator till almost gelled.  Then blend in all remaining ingredients and return to refrigerator to continue gelling for a few hours.

(Instead of pineapple, you may choose to make this a more vegetable salad by putting cooked, fresh frozen peas, chilled, and finely shredded carrots and diced celery or chopped cucumbers into the jello.  Both versions are excellent and very refreshing!) 




God gives us a reason to smile–veggies and fruit! 





1 small pkg of Instant Lemon Jello Pudding

1 8oz pkg of cream cheese

Milk, amount listed on package  (or less)

Graham cracker crust, either made from scratch using margarine or butter and sugar, or purchased already made in a pie tin.


Prepare Ingredients:

Soften cream cheese to room temperature and beat until very soft.  Blend in ½ cup milk until smooth.  Add  1 ½ cups milk & small pkg of pudding.  Beat at lowest speed  (medium on a portable hand mixer) till blended.  About a minute.  (You may use a little less milk to cause the pudding mixture to be “firmer” if you wish.)

Pour mixture into a 9 inch graham cracker crust.  (If you’ve made the crust from scratch and have remaining crust left over, you may sprinkle on top of cheesecake.)

Refrigerate until firm – at least 2 hours.

As an added flourish, you may wish to add canned pie cherries or strawberries as a topping as well.  (This is probably my favorite cheesecake..tastes yummy, inexpensive and so easy to make!)  





Fresh ingredients are always the best



1 lb hamburger (or ground turkey, if you wish)

Onion, diced

1 lb can kidney beans

2  8oz cans tomato sauce

1 tsp chili powder

1 tsp salt (more or less to taste)

1 cup water  (add more as needed depending on amount of noodles used)

½ cup macaroni noodles  (I use about a cup)

½ cup cheddar cheese (or more as desired)


Prepare Ingredients:

Brown onion and hamburger, drain any extra fat from pan.  Add all other ingredients except cheese and simmer, covered, for about 12 to 15 minutes till macaroni is tender.  (You may need to add a bit more water if using more macaroni than called for.)

Sprinkle cheese on top before serving

Serves 3-4  (I usually double or triple the recipe so as to have extras.  It’s really good heated up for left overs too!)  




Well, there you have the first 3 recipes that are among my favorites..easy, quick and tasty!  Let me know if you try them and what you think.  Of course, you can “tinker” with them as you like, which is after all,  the fun of cooking in the first place I guess.
